Description

Delicious and easy-to-make cottage cheese crepes perfect for any meal.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 3/4 cup cottage cheese, any fat content
  • 2 large eggs
  • 1/2 cup + 2 tbsp water
  • 2 tbsp neutral oil, plus more for greasing the pan
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • kosher salt

Instructions

  1. Add ingredients to a high-powered blender and blend for 30-60 seconds, or until smooth and combined.
  2. Heat a medium (around 8″) nonstick skillet over medium heat. Once the pan is hot, add a small pat of butter or a little oil and swirl to coat the pan.
  3. Add about 1/3 cup of batter at a time, quickly swirling to coat the entire surface of the pan. Cook 1-2 minutes, or until the edges look dry, the bottom is golden, and the crepe easily releases from the pan. Flip and cook for another minute and enjoy hot!
  4. Make sure to re-grease the pan in between every crepe for the best browning and to prevent sticking.

  • For best results, use a high-powered blender to ensure the batter is smooth.
