A delicious and healthy muffin made with cottage cheese, eggs, and spinach.

- 1 cup small curd cottage cheese
- 4 large eggs
- 1 cup shredded sharp cheddar cheese
- 1 cup fresh spinach, chopped (or ½ cup frozen)
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, whisk the eggs until frothy.
- Stir in the cottage cheese until well mixed.
- Add the shredded cheddar and chopped spinach; mix thoroughly.
- Season with salt and pepper to taste.
- Pour the mixture into muffin cups, filling them about three-quarters full.
- Bake for 20-25 minutes until golden brown and set in the center.
Notes
- These muffins can be made with either fresh or frozen spinach.
- They are great for breakfast or as a snack.
