Description

A healthy and quick quinoa dish packed with mixed vegetables, perfect for a light meal.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and let simmer for 15 minutes or until liquid is absorbed.
  4. In a pan, heat olive oil over medium heat.
  5. Add mixed vegetables and garlic powder to the pan. Sauté for 5 minutes.
  6. Combine cooked quinoa with sautéed vegetables. Stir well.
  7. Season with salt and pepper to taste. Serve hot.
