A healthy and quick quinoa dish packed with mixed vegetables, perfect for a light meal.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- to taste Salt
- to taste Pepper
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and let simmer for 15 minutes or until liquid is absorbed.
- In a pan, heat olive oil over medium heat.
- Add mixed vegetables and garlic powder to the pan. Sauté for 5 minutes.
- Combine cooked quinoa with sautéed vegetables. Stir well.
- Season with salt and pepper to taste. Serve hot.
