- 1 cup chopped spinach (fresh or thawed from frozen, moisture squeezed)
- 1 small bell pepper, diced
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F and grease an 8×8-inch baking dish or line with parchment paper.
- In a large bowl, whisk together eggs and cottage cheese until fully combined.
- Stir in shredded cheese, chopped spinach, and bell pepper.
- Season with salt and pepper, mixing gently to distribute evenly.
- Pour mixture into prepared baking dish and smooth the top.
- Bake for 35–40 minutes or until top is golden and center is set.
- Let cool for 5–10 minutes before slicing.
- Serve warm or store in fridge for later. Reheat as needed.
