Ingredients

  • 1 cup chopped spinach (fresh or thawed from frozen, moisture squeezed)
  • 1 small bell pepper, diced
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F and grease an 8×8-inch baking dish or line with parchment paper.
  2. In a large bowl, whisk together eggs and cottage cheese until fully combined.
  3. Stir in shredded cheese, chopped spinach, and bell pepper.
  4. Season with salt and pepper, mixing gently to distribute evenly.
