A delicious creamy pasta dish featuring spinach and artichokes.
Ingredients

- 8 oz penne pasta
- 2 cups fresh spinach
- 1 cup artichoke hearts (drained)
- 4 oz cream cheese (softened)
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the penne pasta according to package instructions until al dente. Drain, reserving some pasta water.
- In a skillet over medium heat, sauté spinach and drained artichokes until the spinach wilts.
- In a bowl, mix cream cheese, sour cream, garlic powder, salt, and pepper until smooth. Add reserved pasta water if needed to thin the sauce.
- Combine cooked pasta with the sautéed spinach and artichokes in the skillet. Stir in the creamy sauce until well coated.
- Transfer everything into a greased baking dish, top with mozzarella and parmesan cheese. Bake for 25-30 minutes until golden and bubbly.
Notes
- Feel free to add more vegetables or protein to the dish.
- This recipe can be made ahead of time and reheated.
