Description

A delicious creamy pasta dish featuring spinach and artichokes.


Ingredients

  • 8 oz penne pasta
  • 2 cups fresh spinach
  • 1 cup artichoke hearts (drained)
  • 4 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the penne pasta according to package instructions until al dente. Drain, reserving some pasta water.
  3. In a skillet over medium heat, sauté spinach and drained artichokes until the spinach wilts.
  4. In a bowl, mix cream cheese, sour cream, garlic powder, salt, and pepper until smooth. Add reserved pasta water if needed to thin the sauce.
  5. Combine cooked pasta with the sautéed spinach and artichokes in the skillet. Stir in the creamy sauce until well coated.
  6. Transfer everything into a greased baking dish, top with mozzarella and parmesan cheese. Bake for 25-30 minutes until golden and bubbly.
