Description

Delicious stuffed potatoes filled with shrimp and crawfish, topped with gooey cheese.

Ingredients

Scale
  • 4 large Russet Potatoes (Choose large ones for optimal stuffing and fluffiness.)
  • 2 tablespoons Butter (Essential for moisture and cooking the seafood to perfection.)
  • 8 ounces Cream Cheese (Adds a rich texture that balances the flavors beautifully.)
  • 1 pound Shrimp (Fresh, peeled, and deveined.)
  • 8 ounces Crawfish Tails (A must-have Southern staple.)
  • 2 cloves Garlic (Freshly minced.)
  • 2 tablespoons Cajun Seasoning (Feel free to adjust based on your spice preference.)
  • 2 tablespoons Flour (Needed for creating a roux.)
  • 1 cup Half and Half (Provides creaminess to the cheese sauce.)
  • 1 cup Cheeses (American, Mozzarella, Monterey Jack, Parmesan) (A lovely combination for a gooey topping.)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the russet potatoes by washing them thoroughly and piercing each with a fork; bake in the preheated oven for 40-50 minutes.
  3. Cool and scoop the potatoes once baked; allow them to cool slightly before slicing in half lengthwise.
  4. Sauté the shrimp and crawfish with butter, minced garlic, and Cajun seasoning in a skillet over medium heat for 4-5 minutes.
  5. Create a roux by adding remaining butter to the skillet and whisking in flour until golden; stir in half and half, then melt the cheeses.
  6. Combine the scooped potato flesh with the sautéed seafood and half of the cheesy roux; fill each potato skin with this mixture.
  7. Broil the stuffed potatoes for 3-5 minutes until tops are golden brown and bubbly.
  8. Garnish and serve warm, topped with fresh chopped chives or green onions.

Notes

  • Adjust Cajun seasoning based on spice preference.
  • Ensure potatoes are fully baked for the best texture.
