Description

  • 3 cups cooked chicken, shredded
  • 1 tablespoon butter
  • 1 small yellow onion, diced
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 can (10 oz) cream of chicken soup
  • 1 cup Velveeta, cubed
  • 1 cup shredded Monterey Jack cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley or green onions, for garnish (optional)

Instructions

  1. Cook the Spaghetti: Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Sauté the Onions: In a large skillet, melt the butter over medium heat. Add the diced onion and cook for 3–4 minutes, or until translucent and softened. This adds a sweet, savory base to the sauce.
  3. Make the Creamy Cheese Sauce: Add the cream of chicken soup, undrained diced tomatoes with green chilies, Velveeta cubes, and spices (garlic powder, onion powder, salt, and pepper) into the skillet with the onions. Stir gently over medium-low heat until the Velveeta melts and the sauce becomes smooth and creamy.
  4. Combine with Chicken and Pasta: Add the shredded chicken to the sauce and stir well to coat. Then, fold in the cooked spaghetti. Mix everything thoroughly so the sauce is evenly distributed.
  5. Assemble and Bake: Preheat your oven to 350°F (175°C). Pour the spaghetti mixture into a greased 9×13-inch baking dish. Sprinkle shredded Monterey Jack cheese evenly over the top.
  6. Bake Until Bubbly: Bake uncovered for 25–30 minutes or until the cheese on top is melted and bubbling. Let it sit for 5 minutes before serving. Garnish with fresh parsley or sliced green onions if desired.
