Description

A refreshing cabbage salad with a creamy dressing.


Ingredients

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 3 green onions, sliced
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl combine 4 cups green cabbage, 2 cups red cabbage, 1 cup carrots, and 3 sliced green onions and toss gently to mix evenly.
  2. In a separate bowl whisk together 1 cup mayonnaise, 2 tablespoons apple cider vinegar, 2 tablespoons sugar, 1 teaspoon salt, and 1/2 teaspoon black pepper until smooth and creamy and taste to adjust seasoning.
  3. Pour the dressing over the vegetables and toss thoroughly until all the cabbage is evenly coated and glossy.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to blend and cabbage to soften slightly.
  5. Stir again before serving and adjust seasoning if needed for best flavor and texture.
