Ingredients

- 4 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1 cup shredded carrots
- 3 green onions, sliced
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl combine 4 cups green cabbage, 2 cups red cabbage, 1 cup carrots, and 3 sliced green onions and toss gently to mix evenly.
- In a separate bowl whisk together 1 cup mayonnaise, 2 tablespoons apple cider vinegar, 2 tablespoons sugar, 1 teaspoon salt, and 1/2 teaspoon black pepper until smooth and creamy and taste to adjust seasoning.
- Pour the dressing over the vegetables and toss thoroughly until all the cabbage is evenly coated and glossy.
- Cover and refrigerate for at least 30 minutes to allow flavors to blend and cabbage to soften slightly.
- Stir again before serving and adjust seasoning if needed for best flavor and texture.
