A delicious recipe featuring tilapia fillets cooked in a flavorful roasted red pepper sauce.
Ingredients

- 4 tilapia fillets
- 2 tbsp olive oil (divided)
- 1 tsp smoked paprika
- 0 tsp ground cumin
- salt and black pepper (to taste)
- 1 small onion (chopped)
- 3 cloves garlic (minced)
- 1 cup roasted red peppers
- 0 cup vegetable or chicken broth
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup (optional)
Instructions
- Season tilapia fillets with salt, pepper, smoked paprika, and cumin.
- Heat olive oil in a skillet and cook tilapia 3–4 minutes per side. Remove and set aside.
- Sauté onion in the same skillet until soft, then add garlic.
- Add roasted peppers and broth, simmer for 5 minutes.
- Blend sauce until smooth, then return to skillet.
- Stir in lemon juice and honey, adjust seasoning.
- Return tilapia to sauce and simmer for 3–5 minutes.
Notes
- This recipe can be served with rice or quinoa for a complete meal.
- Feel free to substitute tilapia with any other mild white fish if desired.
