Description

A comforting and flavorful slow cooker ramen dish made with tender beef and fresh vegetables.

Ingredients

Scale
  • 1 ½ pounds beef chuck roast, cut into chunks
  • 4 cups low-sodium beef broth
  • 2 cups water
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon brown sugar
  • 1 teaspoon chili paste (optional)
  • 2 carrots, sliced
  • 1 cup sliced mushrooms
  • 3 packs ramen noodles (discard seasoning packets)
  • 2 cups fresh spinach
  • 3 green onions, sliced
  • 2 soft-boiled eggs (optional)

Instructions

  1. Build the Flavor Base: Place the beef chunks into your slow cooker. Add beef broth, water, soy sauce, sesame oil, garlic, ginger, brown sugar, and chili paste. Stir gently to combine. Even at this stage, the aroma starts to develop.
  2. Slow Cook to Perfection: Cover and cook on low for 7–8 hours or high for 4–5 hours. As the hours pass, the beef becomes incredibly tender, absorbing all the savory richness of the broth. This slow cooking process is what makes Slow Cooker Beef Ramen Noodles so deeply flavorful.
  3. Shred the Beef: Once the beef is fork-tender, remove it carefully and shred it using two forks. Return the shredded beef to the slow cooker. Watching it fall apart so easily is always satisfying.
  4. Add Vegetables and Noodles: Stir in the carrots and mushrooms. Cover and cook for 20–30 minutes until slightly tender. Then add the ramen noodles and cook for another 10–15 minutes until they soften. The noodles will soak up the broth beautifully.
  5. Finish with Freshness: Add fresh spinach right at the end and let it wilt naturally in the hot broth. Serve your Slow Cooker Beef Ramen Noodles topped with sliced green onions and soft-boiled eggs for a classic touch. Ladle into deep bowls and enjoy immediately while steaming hot.
