Description
Delicious and healthy almond butter oat bars perfect for a snack or breakfast!
Ingredients

- 1/3 cup whole milk greek yogurt
- 1/3 cup creamy almond butter
- 1 large egg
- 2 Tablespoons refined coconut oil (melted)
- 1/2 cup maple syrup
- 1 Tablespoon vanilla extract
- 2 teaspoons ground cinnamon
- 1 3/4 cup rolled oats
- 1/2 cup sliced almonds
- 1/4 cup mini chocolate chips (or mini white chocolate chips)
Instructions
- Preheat the oven to 325°F and line an 8-inch x 8-inch baking pan with parchment paper.
- In a large bowl, whisk together the yogurt, almond butter, egg, melted oil, maple syrup, vanilla and cinnamon.
- Add the oats, almonds and chocolate chips. Mix together until combined.
- Transfer the mixture to the prepared pan and bake for 30-35 minutes (or until the bars can hold their shape and look set).
- Remove, let cool completely (at least 1 hour), and slice into bars.
- Serve and enjoy or save for later!
Notes
- For a variation, try adding dried fruit or different nuts!
- Store in an airtight container.
