Description

Deliciously soft cookies loaded with rainbow sprinkles, perfect for any celebration!


Ingredients

Scale
  • 1 cup Cold Butter (cut into cubes)
  • 1 cup Brown Sugar
  • 1/2 cup Sugar (may increase to 3/4 cup)
  • 2 Eggs
  • 2 teaspoons Vanilla
  • 1/2 teaspoon Almond Extract
  • 2 cups All-Purpose Flour
  • 1 cup Cake Flour
  • 1 teaspoon Cornstarch
  • 3/4 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • 3/41 cup Rainbow Sprinkles (may add more)

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large mixing bowl, cream together butter, brown sugar, and sugar for 4 minutes, scraping the sides of the bowl often.
  3. Add eggs one at a time, mixing for 1 minute after each addition. Stir in vanilla.
  4. Stir in flour, cake flour, cornstarch, baking soda, and salt. Mix just until incorporated.
  5. Stir in rainbow sprinkles.
  6. Form into 6-ounce balls for large cookies or 4-ounce balls for medium cookies. Place on parchment paper or Silpat-lined baking sheet.
  7. Bake for 8 – 12 minutes, depending on the size of the cookies. Watch carefully.
  8. Remove from oven and let sit for at least 15 minutes to allow them to set up.

Notes

  • Cookies may need additional time if they are larger than 6 ounces.
  • For a chewier texture, slightly underbake the cookies.
