Description

Delicious and fluffy waffles made with cottage cheese, perfect for a hearty breakfast.


Ingredients

Scale
  • 1 cup cottage cheese (full fat is best)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 Tablespoon maple syrup (plus more for serving)
  • 1 1/4 cup flour (all-purpose or whole wheat)
  • 1 teaspoon baking powder
  • 3 Tablespoons coconut oil (melted and cooled)
  • 3 Tablespoons milk of choice (or up to 1/4 cup for thinner pancakes)

Instructions

  1. In a large bowl, combine the dry ingredients and whisk.
  2. Add the cottage cheese, eggs, vanilla, maple syrup, and milk to the blender and blend until smooth.
  3. Add the blended ingredients to the dry ingredients and stir gently.
  4. Stir in the coconut oil, still until well combined. Batter will be thick.
  5. Heat a waffle iron.
  6. Scoop 1/3 cup batter into each waffle cavity.
  7. Cook 3-6 minutes (mine took 3, but this depends on the waffle iron).
  8. Top with syrup and enjoy!
