This delicious coconut pineapple jasmine rice is a perfect side dish that combines the creaminess of coconut milk with the sweetness of pineapple.

- 1 cup jasmine rice
- 1 cup full-fat coconut milk
- 1 cup water or vegetable broth
- 1 cup pineapple chunks
- 1/2 cup toasted shredded coconut
- 1 tablespoon fresh lime juice
- 1/2 teaspoon salt
- 2 tablespoons chopped cilantro or parsley
Instructions
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, coconut milk, water or broth, and salt. Stir to mix.
- Bring the mixture to a gentle boil over medium heat.
- Once boiling, reduce the heat to low and cover the saucepan with a tight-fitting lid. Simmer for 15–18 minutes.
- Turn off the heat and let the rice rest, covered, for 10 minutes to absorb moisture and finish cooking.
- Uncover and fluff the rice gently with a fork. Fold in the pineapple chunks and lime juice.
- Taste and adjust seasoning if needed.
- Top with toasted shredded coconut and chopped herbs. Serve warm.
