Description

Indulge in these rich and delicious Ferrero Rocher Cupcakes topped with creamy frosting and a Ferrero Rocher chocolate in the center!


Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 12 Ferrero Rocher chocolates
  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • ½ cup cocoa powder (for frosting)
  • 34 tbsp heavy cream
  • 1 tsp vanilla extract (for frosting)
  • 12 Ferrero Rocher chocolates for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. Gradually mix in dry ingredients alternating with milk, beginning and ending with flour mixture.
  6. Fill cupcake liners ⅔ full. Bake for 18–20 minutes, or until a toothpick inserted comes out clean. Cool completely.
  7. Use a small spoon or apple corer to remove the center of each cupcake.
  8. Place one Ferrero Rocher chocolate into each cavity.
  9. Beat softened butter until creamy.
  10. Gradually add powdered sugar and cocoa powder, mixing until combined.
  11. Add vanilla and heavy cream, one tablespoon at a time, until desired consistency is reached.
  12. Pipe frosting onto cupcakes and top each with a Ferrero Rocher.

Notes

  • Make sure to let the cupcakes cool completely before adding the frosting and Ferrero Rocher.
  • Adjust the amount of heavy cream in the frosting to reach your desired consistency.
