Instructions

  1. Start by preheating your oven to 425°F (220°C).
  2. Wash and peel the carrots, then slice them into evenly sized sticks or rounds to ensure consistent roasting.
  3. In a large bowl, combine the carrots with minced garlic, extra virgin olive oil, salt, and black pepper. Toss everything until the carrots are well-coated to help the garlic infuse its flavor during roasting.
  4. Spread the carrots in a single layer on a baking sheet lined with parchment paper to allow even heat circulation.
  5. Roast in the oven for 20 to 25 minutes, tossing halfway through, until the carrots are tender and golden brown.
