Description
A delightful sweet potato casserole topped with toasted mini marshmallows.
Ingredients

- 3 lbs sweet potatoes
- 1/2 cup brown sugar
- 1/3 cup unsalted butter
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 cups mini marshmallows
Instructions
- Peel and cut sweet potatoes into large cubes or thick rounds. Boil in salted water for 10–15 minutes, until just fork-tender. Drain and cool slightly.
- In a saucepan over medium heat, melt butter and stir in brown sugar, cinnamon, salt, and vanilla extract. Simmer until slightly thickened.
- Preheat oven to 375°F (190°C). Arrange sweet potatoes in a greased baking dish. Pour glaze evenly over the potatoes.
- Cover the dish with foil and bake for 20–25 minutes.
- Remove foil and sprinkle marshmallows over the top. Bake uncovered for 10–15 minutes until marshmallows are puffed and golden brown.
- Let rest for 5 minutes before serving warm.
