Pressure Cooker Beef Stew

Description

A hearty and comforting beef stew made in a pressure cooker, perfect for a quick meal.


Ingredients

Scale
  • 1 lb stew meat (frozen)
  • 1/2 c onions (diced)
  • 4 c beef broth
  • 1 c frozen vegetables
  • 2 potatoes (russets, peeled, cubed)
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp pepper
  • 1 tbsp Worcestershire sauce
  • 12 tbsp cornstarch (only if you want to thicken the broth at end)

Instructions

  1. Add frozen beef to pressure cooker. Add onions, broth, vegetables, potatoes, tomato paste, spices and Worcestershire sauce. Mix.
  2. Place lid on instant pot and seal shut. Close the pressure release valve. Set pot to manual, high pressure for 40 minutes.
  3. When cooking is complete, let pressure naturally release for 15 minutes.
  4. Carefully open the pressure valve and the instant pot lid. Mix well and if you want to thicken, set to sauté. Add a few tbsp of hot liquid from pot with cornstarch, whisk until smooth, add in and allow to bubble and thicken.

Notes

  • This stew is perfect for cold nights and can be served with bread for a complete meal.
