Description

A delicious chicken pot pie made with tender chicken, savory vegetables, and a flaky crust.


Ingredients

Scale
  • 1 lb chicken tenders (approx. 5 tenders)
  • 2 cups chicken broth
  • 3 ribs celery, diced (approx. 3/4 cup)
  • 1 medium onion, diced (approx. 1 cup)
  • 3 carrots, sliced (approx. 1 cup)
  • 1 tsp ground thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup frozen peas
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 1 unbaked pie crust (or biscuits or puff pastry)

Instructions

  1. Preheat oven to 400F.
  2. In the insert pot of the Instant Pot, combine chicken tenders, broth, celery, onion, carrots, thyme, salt, and pepper.
  3. Close the lid and set the vent to the sealed position. Select a cook time of 4 minutes at high pressure.
  4. Once the cook time is complete, allow a natural release of pressure. After the pressure has released and the valve drops, carefully remove lid.
  5. Remove chicken to a cutting board.
  6. Whisk together flour and cream until lumps are gone, creating a slurry. Stir slurry into the hot broth in the insert pot, stirring well to combine.
  7. Add frozen peas to the broth and cream mixture.
  8. Shred or chop chicken as desired, then return to the broth and stir to combine.
  9. To prepare a traditional chicken pot pie, pour filling into a deep dish pie plate and top with prepared pie crust. Use a fork to prick a few holes into the top of the crust. Bake in preheated oven for 30-40 minutes, until crust is golden brown.
  10. To prepare as a chicken pot pie casserole, use a cookie cutter, biscuit cutter, or the rim of a glass to cut small rounds out of the prepared pie crust dough (or biscuits or puff pastry, if preferred). Place on a baking sheet lined with parchment paper. Bake as directed until golden brown.
  11. Scoop filling into bowls and serve with rounds of pie crust, biscuits, or puff pastry.

Notes

  • This pie can also be made as a casserole for easier serving.
  • Let the pie cool for a few minutes before serving.
