Description
A delicious and healthy pumpkin bake made with cottage cheese and topped with Greek yogurt and pecans.

- 1 cup cottage cheese
- 1 cup pumpkin puree
- 3 large eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/8 tsp ground cloves
- 1/4 tsp salt
- 2 tbsp coconut flour
- 1/2 tsp baking powder
- for topping: Greek yogurt, maple syrup, and pecans
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a blender, combine cottage cheese, pumpkin puree, eggs, maple syrup, and vanilla extract. Blend until smooth.
- In a mixing bowl, whisk together cinnamon, nutmeg, ginger, cloves, salt, coconut flour, and baking powder.
- Pour wet mixture into the bowl with dry ingredients. Stir until just combined.
- Pour batter into the greased baking dish and smooth the top.
- Bake for 35–40 minutes until the center is set and edges are golden.
- Let cool for 15–20 minutes before slicing.
- Serve with Greek yogurt, maple syrup, and pecans on top.
Notes
- This dish can be served warm or chilled.
- Store leftovers in the refrigerator for up to 3 days.
