Ingredients

  • 2 cups cubed carrots, sweet potatoes, or squash
  • 1 orange, apple, or pear, sliced
  • 1/2 cup walnuts, pecans, or pumpkin seeds
  • 1/2 cup feta, goat cheese, or avocado
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons lemon juice
  • To taste salt and pepper

Instructions

  1. Roast cubed winter vegetables with olive oil, salt, and pepper until caramelized.
  2. Prepare the greens by washing, drying, and massaging if using kale.
  3. Slice citrus or apples and toast nuts lightly.
  4. Whisk the dressing using olive oil, Dijon mustard, honey, lemon, salt, and pepper.
